- 125 g butter
- 150 g brown sugar
- 80 ml honey
- 60 ml molasses or golden syrup*
- 5 ml baking soda
- 15 ml ground ginger
- 7 ml mixed spice
- 2 eggs
- 200 g sour cream**
- 210 g all-purpose flour
- Icing
- 15 ml butter
- 170 g powdered sugar
- 45 ml lemon juice
- Christmas sprinkles to decorate (optional)

Preheat the oven to Th 5-6 / 160°C / 325°F without convection.

In a 2.5L / 2.6 qt saucepan, combine butter, sugar, honey and molasses. Melt over low heat, stirring frequently. Remove from heat, stir in baking soda then allow to cool slightly.

Pour mixture into a medium mixing bowl then stir in spices. Whisk in eggs and sour cream, then flour until smooth.

Pour into the SBF Rectangular and gently tap form on the countertop to remove some bubbles.

Bake for 40 min., or until firm to touch. Allow to stand until completely cool, approx. 30 min., before gently unmolding.

For the icing: In a clean mixing bowl, combine butter, powdered sugar and lemon juice to make a thick spreadable icing. Add a teaspoon of water if needed. Spread over cake and decorate with sprinkles.
TIP:
- Molasses will give a darker color and slightly more intense flavor than golden syrup. But both are interchangeable.
- You can substitute 180 ml / ±¾ cup milk for sour cream
